Top Chef Guide to NYC Restaurants
Foodies and Bravo TV addicts, set your Tivos - - tonight marks the fourth season of Top Chef. In their quest for $100,000 and a precious fifteen minutes of fame, 16 cooks will suffer a series of absurd challenges and surrender to the whims of Tom Colicchio, Padma Lakshmi, and a rotating host of guest judges. Last week we had a look at Chicago sites important for the new season, but as the premiere approaches the real question is: who's going to win? All three previous winners have done time in New York kitchens, so I'd put my money on one of the six hopefuls from our town this season. Ahead is a map of where to sample the work of Top Chef contestants past and present. This week marks the release of Jennifer 8. Lee's first book, The Fortune Cookie Chronicles. On a mission to uncover a number of mysteries, The New York Times' Metro reporter and Gawker object of obsession flies around the world (Peru, Mauritius, Dubai) in search of enlightening meals and stories about Chinese cuisine. Celebrate Pancake Month in New York
Not to be outdone by the English tradition of Shrove Tuesday, Americans dedicate all of February to pancakes. I'm convinced that the reinvention of a Christian observance (pancakes were a common meal on the eve of Ash Wednesday) into a monthlong celebration is the work of corporate forces, namely Aunt Jemima or IHOP. Nevertheless, for those who think that Pancake Month is cause for celebration, there are plenty of alternatives to the corner diner. The given selection runs the gamut from chain restos to high-end brunch spots, but as always, additional recommendations are welcome via comments or tips.

Fondue a Deux in New York
Valentine's Day is approaching, and if you're half of a couple without dinner plans, it's time to hustle. With most places booked for the night weeks in advance, what options are left? Between the holiday, the cold weather, and recently uncovering my mother's old fondue pot in the back of a cupboard, I'd say a Swiss revival is in order. Depending on your age, fondue can either be nauseatingly kitschy or fun. Either way, look at it objectively: it's melted cheese and booze, a combination that's hardly unpalatable. Romantic repast or cheesy (pun!) throwback to the 1970s? You decide. Further suggestions welcome as always, in the comments or tips.

Dining in New York's Koreatown
In the New York Times' first-ever review of a Korean restaurant, former critic Ruth Reichl asked, "Why hasn't Korean food become more popular in New York City?" The finger was pointed at menus, which were deemed too hard for American diners to navigate. Almost fifteen years after posing the question, Korean cuisine has a gained a higher profile, but menus remain as encyclopedic and overwhelming as ever. English translations have been added but rarely help (at least there's no pretense in "gelatin of cow knee"), pointing to pictures on the menu is a crapshoot, and innocuous offerings like mediocre sushi and barbecue can become tiring after your first trip.

Eating Lardo in Manhattan
Extreme eating is my kind of sport, but chewing on pure pig fat raises concern for my arteries. Christening it "lardo" certainly doesn't help matters. But as they say: everything in moderation. Invented in the Apuan Alps of Italy and popularized in New York by chefs like Mario Batali, lardo -- or cured pork fatback -- actually isn't as scary as it sounds. Once the fat is rubbed with salt and spices, shaved into paper thin slices, and served in small bites, a delicacy is born. Simplicity is best -- lacing it over a warm starch, maybe a slice of toasted bread or bowl of risotto, is all that needs to be done. Quickly achieving ubiquity on NYC restaurant menus, lardo can be sampled at most downtown spots which serve respectable Italian fare. Menus frequently change with the seasons, so any amendments or additions to the list are welcome in the comments or tips.
