Big piles of raw ingredients are gradually stuffed into a pot at your table for boiling, and you ladle it out for gorging as needed. "Stew" is really a misnomer, as chanko nabe really just comes out as a boiled mound of goodness. You are advised to skim off the beef scum before serving, but that's a small price to pay.
